Easter came early this year— almost like an afterthought before the actual thought. It crept up on us, shocking like the mystery that it celebrates. Acting much like the weather: temperamental, moody, unpredictable, and early. It’s been an up and down of temperature—unseasonably warm one day and typically cold the next.  Lions and lambs fighting and ending in an oddly unbalanced stalemate.  Hot and cold like the most passionate affair or weary teacher. But Easter came and went, as did March—quickly, quietly, and early (by early, I mean, time is moving forward faster than I could have imagined or even hoped in darker times). And now it’s gone.

Easter ushers a breath of fresh air after stale Lent, dark with deprivation and reflection, and quarter three, full and dense with symbolism and five-paragraph essays. The death and darkness of Lent and winter months culminate in Resurrection and the rebirth of spring. Easter is a moment of new beginnings and celebratory feasts.
And feast we did.

This post is photo heavy, but don't worry pictures don't have calories! 
Hope everyone had a delicious Independence Day. I just happened to stuff my face the whole entire weekend per usual. We deffo celebrated the biggest hotdog holiday to the fullest with a ton of hotdogs. The Fourth of July was filled with tasty bites like homemade hummus, a corn, cucumber and avocado salad, and sweet baked beans. There were grilled hotdogs with all the toppings, sweet marinated chicken and fat juicy burgers galore. Steamers drenched in butter, oysters freshly grilled, and scallops seasoned. The feast was topped off with our fresh blueberry pie (more on this later), nutty and crispy homemade baklava, caramel crumb apple pie, and a colorful fruit pizza. As with almost all holidays, mine was all about food!

photo op: WEEKEND fun

I totally love the weekend! I tend to say to people that everyday is like the weekend for me because I am a freelancer with a loose schedule and what appears to be a ton of free time. But there is something particularly magical about the actual weekend, when people with busy 9 to 5’s (or 6 to 4’s, like my boyfriend) are free and doing things other than working. Weekends mean relaxation, experimentation, adventure or lazy abandon. French toast, Hard Grove in Jersey City, tons of home popped popcorn (and The Following … obsessed P.S.), and turkey chili… sounds like the perfect weekend to me.
