MangiaMore: chocolate chip GRAHAM cracker cookies

Good news calls for celebration, amirite? Good news calls for a special treat, correct? Chocolate chip cookies are perfect for any occasion, but they are especially well suited for good—no great— news. We got some great news on Monday, so I whipped up a batch of cookies. Not just my usual chocolate chip (and rainbow sprinkle) cookies; I mixed it up for this celebration. This time I made some super simple and super scrumptious chocolate chip graham cracker cookies.

On the outside they look just like your normal, moist, sweet and chocolaty cookies, but on the inside, these delicious gems have graham cracker crumbs to supplement the dry ingredients. Unlike many other choco chip cookie recipes, this one did not call for regular white sugar, and relied on rich brown sugar and the deep sweetness of the earthy graham crackers. Other than that, these cookies inspired by Buns In My Oven on My Baking Addiction were divine. It is almost impossible to tell that the secret to their gooey deliciousness and caramel notes is those unassuming graham crackers. Put them to the test… like I have for the last four days.

an extension of HOME : Padoca Bakery Opening on the Upper East Side

At the corner of 1st and 68th Street, across from a playground, rests Padoca, a gem. Clean light streams through the walls of windows, illuminating the playful, intimate space while smells of sweets and savories and strong coffee fill the air, inciting the desire for delicious bites.

The name Padoca, a warm nickname for a bakery in Brazil, combines owner Marina Halpern’s Brazilian heritage with the ideals of her new bakery. Halpern strives for an authentic neighborhood bakery that is for the community where nostalgia and comfort meets artistry and innovation through inventive, creative and delectable foods and drinks full of heart and soul.

Gorgeous cookies, like the balanced classic chocolate chip cookie and the imaginative “Rocky Road” chocolate cookie studded with toasty marshmallows, will haunt the dreams of any sweet-tooth. The pretty bolo de coco, coconut cakes, are edible masterpieces—tropical, refined, flavorful and just sweet enough for afternoon tea or a mid-morning snack. Swirled sweet breads, like the Romeo & Juliet rolled with cheese and guava paste, bring together sweet and a little salty, while the red velvet brownie confection topped with sweet and tangy cream cheese frosting wrapped up to-go is the consummate indulgence.

The new bakery also serves up savory bites to rival its sweets.  One of its signature savories is its Pao de Queijo, fondly called the “PDQ.” This highly addictive gluten-free pastry is light as air, doughy and eggy, filled with the most marvelous bite of cheese, culminating in flavors redolent of childhood memories. Savory empadinhas, meaty mini pot pies, filled with chicken and mushroom or a variety of fillings, bring buttery moments with warm hearty centers.

Padoca also presents breakfast items like an “Omega 3” carrot-apple-raisin-walnut-flaxseed breakfast bun, acai bowls, and teacakes and bread, while lunch includes more grab-and-go items like healthful salads, sandwiches and soups. The bakery serves coffee by NobleTree Coffee using the Modbar espresso system, and its tea program is by Palais de Thes

Even amongst a sea of changes, one thing remains constant in my life— eating. So when things shift, opportunities arise, and feelings fade, food brings comfort and familiarity.

Making stir-fry with Mommie kept me on my toes, but I was excited to eat the crispy veggies and tender meat drenched in sweet and spicy sauce blanketing sesame scented rice.

I indulged in sweet things that made my teeth quiver with happiness while allowing a warmth to rush over me and a smile to bend. Like chocolate Mini- Course Cupcakes strewn with all of the imagination of children and soft chocolate chip cookies, bedazzled with rainbow sprinkles and sunshine.

At the Alumni- Faculty BBQ that I helped to plan, somehow, in the warm air heavy with smoke, the food was bright and refined, exceeding my cookout expectations. Beautiful vegetables gleamed in the afternoon light while burgers hissed and sizzled on the lazy big jon grill.

Yelp events really know how to make a girl happy, whisking her away to eat her memories of a simpler time at Johnny Rockets in Hoboken. Fries and onion rings quickly brought me back to elementary school field trips and failed first days of work. But burgers and buns and Oreo milkshakes made the present worth it.

A pasta moment of appreciation warmed teachers’ bellies and the company made it delicious.
